I'm sticking with low carb meals at the moment so trying to bulk my meals up with vegetables but it's so boring! I want flavour! I tried a great butternut squash noodle recipe yesterday with feta but looking for more inspiration

Mine is simple, every vegetable, mushroom I have in a wok with "Kabuto" Stir fry sauce and "Mae Ploy" sweet chili sauce. I cook up a 4 oz chicken, or pork on the side for a little protein. I find using avocado oil (sparingly) allows me to use a higher heat for a crisper finish..

I like checking cookbooks out of the library and copying out recipes that I like. I only buy the ones I love. I also have an electronic recipe database (I use Mastercook but there are others...) which will calculate nutritional values, etc. And there is recipesource.com.

Try a new veggie (so many options...caulifliwer, turnips, asparagus, green beans, long beans, celery, cabbage, mushrooms, peppers, eggplant, beets, brussel sprouts....) in a new dish everyday. I especially love Moosewood cookbooks. But their recipes are a little ingredient long.

I like sauteing my veg in a little oil next to whatever meat I cook (usually chicken), carmelizes the veg and some of the meat flavor seeps in a bit. Doesn't add a lot of calories but changes the flavor.

I never boil any veg. Blech. Steaming is good. Toss brocolli (steamed) with a little lemon juice...brightens up the flavor. Carrots are more amazing w/ a little ginger.

And...spices. Garam masala is nice on many veg. There is an ethiopian red pepper blend called berbere that is fantastic...It may be hard to find in stores, just depends on where you are (I know of 2 or three places I could get it near where I live, but I typically make my own) I make a veggie stew with it...saute some onion, and a little garlic & ginger. Add some water or red wine, whatever veg you want...potato, carrot, lentils, cabbage, green beans, mushrooms, zucchini, yellow squash, tomato. Whatever you feel like with the desired amount of spice (I won't recommend, I like it hot). Cook it until the veg are done to your satisfaction. Yummy.

Roasting vegetables in the oven caramelizes the sugars in them and gives them a different flavor. Look for vegetarian recipe sites; they're experts on making vegetables taste good (but be aware, vegetarian doesn't necessarily mean low calorie).

You can also saute some vegetables in a little oil. Best Brussel sprouts I ever had were halved and sautéed with bacon and onions.

I like to roast my veggies in the oven adds a ton of flavor, you don't even have to use oil. I love teriyaki sauce on veg to change it up. You can water it down or make your own to control the carbs. Rice vinegar or balsamic vinegar is good to add flavor.

I prefer to mostly saute or roast my veggies.

Dress with various combos of acid (balsamic vinegar, flavored vinegars, citrus juices) and oil (olive, various nut and seed oils), add salt, pepper, and experiment with different herbs and spices.

Add cheese (you may need to look at different cheeses to see which ones fit into your particular version of low carb).

Add nuts (again, I don't know how low carb you are or how much nuts you can fit in your meals, but it doesn't take much to perk up some veggies).

Add bacon or other smoked meats.

Add hot sauce, chilis, ground chipotle ...

Hey, I'm eating it right now. I sauteed onion & garlic, added bunch of squash, carrots,spinach & green beans, added 32 ounce chicken broth, unsalted, added some salt & put in 3/4 cup of the orange color lentils a few minutes before it was ready. Today i did add 2 ounces of loose sausage cuz i had some but I don't always. really good, oh, i put some Parmesan cheese when done

roasted veg are fab especially with a splash of balsamic vinegar or honey. But there are such a variety of veg out there so widen your horizons, try different ones

Roasting is my favorite way to prepare vegetables. Add a bit of olive oil, s&p. Cauliflower, broccoli or asparagus are amazing roasted. I also like eggplant & red onion roasted together then I add it to a grain salad.

Stir frying vegetables is also a favorite.

Steam cauliflower then puree with a bit of butter, cream cheese. Bake with a dusting of parmesean cheese on top. Awesome side dish!

Keep trying new vegetables. I ate very few as a child.. now I love them.

try grilling veggies with olive oil and seasoning ... cubed butternut squash and onion sauteed in coconut oil , salt and pepper until browned ... add fresh spinach, sunflower seeds and craisins after cooked

Roasted cauliflower with sesame oil is my absolute favorite. It doesn't sound like much but it's crazy good to me.
