It's squash season

I am finding that i really enjoy various squashes and started experimenting with different ways to cook them up. I am not fond of squash that is made to be like mashed potatoes but rather enjoy it when its chunky... love steam cooking chunks of butternut squash then frying it up in coconut oil, salt and pepper then adding sunflower seeds,craisins and fresh spinach leaves after its cooked. ..any ideas out there?

    Try cubing a butternut and roasting in the oven at 400 for 40 minutes, with some EVOO salt & pepper. I add a sprinkle of chopped pecans. Awesome.

    Also, a bit higher calorie option......cut longways and scoop out an acorn squash and grill it flesh down for 30 mins, then flip over and put in some melted butter, brown sugar and chopped pecans -- I add a dash of bourbon and grill until it gets all bubbly and soft. It's fantastic.

    Oh, and turkey stuffed acorn squash in a Mexican taco style is great too. And if you haven't tried it, spaghetti squash with spicy ground chicken sausage bolognese.

    I love halving a spaghetti squash, cooking upside down in the oven with a little evoo, salt and pepper for 40 minutes. When it's done I fork out the squash, mix with a little sour cream, chicken breast and taco seasoning or hot suace, then throw it back in the squash skin and bake with a little cheese
