Easy, Delicious Lentil Soup Recipe

I made this tonight. It was 99 calories for a very generous 275 g serving. I drizzled a T of balsamic vinegar on top, and that really took the flavors to the next level.

    I made it even easier by using a can of crushed tomatoes. And I didn't have French lentils--just regular. Hope you enjoy it!

    I make a different style of Lentil soup with red split lentils, carrot, potato and onion. Fry the chopped onion until soft, add the rest of the ingredients with stock or well salted water, about 2-3 cups water per cup of lentils. Cook for about an hour, or 10min in a pressure cooker at 15psi. I actually use the slow cooker and let it run for 3-5 hours on High. This is a typical Scottish style Lentil soup, not fancy but rib sticking! Leftovers go solid and need watered down or you'll have to serve it by the slice!

    That sounds really good, and easy, as well. Will have to give it a try. I've also found that I need to add water when reheating my soup.

    We would not make it through the winter without Lentil soup. It's like a hug in a bowl. Very low calorie, too. I usually serve it with cheese scones.

    Hmm! I have all those ingredients. Providing I go replace my now spoiled garlic and that split red or green lentils would work.

    Thanks for the recipe link! Sounds delicious :) Here's my favorite:

    Tangy Lentil Soup
    Ingredients
    • 1 T olive oil
    • 1 medium onion, diced
    • 2 stalks celery, diced
    • 2 carrots, diced
    • ¼ cup tomato paste
    • 3 garlic cloves, minced
    • 6 cups water
    • 1 ½ cups dried lentils
    • 2 bay leaves
    • 1 T dried parsley
    • 1 tsp salt
    • 1/4 tsp black pepper
    • 2 T Dijon mustard

    Preparation
    Heat the olive oil in a large stockpot over medium-high heat. Add the diced onion, celery, and carrots; saute for 10 minutes. Add the tomato paste and minced garlic; sauté 1 minute. Add water, lentils, bay leaves, parsley, salt and pepper; bring mixture to a boil. Partially cover, reduce heat, and simmer mixture for 30 minutes. Turn off the heat, discard the bay leaves and stir in Dijon mustard.

    The Dijon gives it an awesome "zing". If people don't know there's Dijon in it, they can't quite identify it, but they still love it :)

    How are lentils low calorie? There isnt a single grain, bean, legume or pulse thats low calorie that I know of.

    Hmm, 116 calories in 100grams so definitely lower calorie than meat. My ex used to call lentils "the closest food to dirt". I love them. Love all the beans. Nutrition per calorie seems pretty high for beans, they have fiber, folic acid, they are good for you.

    Made an accidental lentil soup yesterday that came out great (emergency soup as there was nothing to eat for supper so just threw things together, all the stuff we had in the fridge)

    1lb lentils
    2 cans chopped tomatoes
    a few dried shitake mushrooms
    One onion, chopped
    One green pepper, chopped
    One jalapeno, chopped
    One potato, chopped
    Ethiopian spice mix (beriberi)
    Cumin
    Basil
    Pepper
    Salt

    Threw all this together in the crock pot with the end of a box of beef stock and some water, did not saute the veg or anything as we were in a hurry. It was fantastic.
