Adapting Thanksgiving Eggrolls recipe to use with Vietnamese spring roll skins and not deep frying

So I want to make these: http://fortunegoodies.com/thanksgiving-egg-rolls/ but OH came back from the store with Vietnamese spring roll paper made from rice flour instead of egg roll wrappers. I know how to work with spring roll skins but am wondering if I should save this for proper spring rolls and try another store for egg roll wrappers. However, tonight may be the last night for turkey leftovers.
Also, I want to pan fry rather than deep fry.
Suggestions?

As long as everything in the rice paper is cooked, you should be OK.
Pan-frying rice paper wrappers is fine as well.
You probably won't need the egg wash to stick the rice paper rolls together though. Just warm water in a bowl, dip the sheet in until it softens and then put it on plate or cutting board to assemble your rolls.0 -
Yup, all is cooked - leftover turkey, mashed potatoes, and stuffing.
