So I just tried this out today, and it was fantastic-so I thought I would share it with you all:

2 leaves lettuce (any kind works, I prefer red leaf or romaine)-5 cals
1 cup spinach (7 cals)
Extra lean turkey (I used 2 oz-which is 60 cals, but you can easily up it to 4 for 120)
Taco seasoning (just a few pinches of it-1 tbsp is for an entire pound)
Salsa (2 tbsp-10 cals)
Babybel cheese (I used half of one-35 cals)

Cook the turkey on the stove on medium-low heat, depending in whether you have it frozen or not. I personally added spices to it (Italian seasoning, salt, pepper). Add the taco seasoning and a little water and mix it around until fully cooked. Pour it on top of the chopped lettuce and spinach mixture. Grate the cheese on top, and add the salsa. Enjoy!

Obviously if you use more turkey, you'll get a lot more protein, you can up the fat by using oil to cook the turkey and add more cheese, etc. I like the low calorie and high protein which leaves room for me to eat more; like today I also had 2 rice cakes with peanut butter. :)

Almost exactly the same as I make. We also do Turkey tacos, but there I use regular corn tortilas

we're having turkey tacos tomorrow night! Over the weekend, my husband and I tried bison steak and it was so similar to beef that I'm going to try the ground bison for the tacos at some point. It's low in fat, high in protein, and I honestly thought it tasted exactly like a piece of steak. Great idea for the taco salad......I love to make that with any leftover ground turkey.
