STARVING, why?!

Hi! Hope everyone is doing well. Me, on the other hand, I'm having some issues.

For the last few days, I have been FAMISHED! I am 6'1", currently 388lbs (down from 409), and I haven't been on any particular "diet", just the "eat less, move more" sort of thing, and let me tell you, I am ravenous. It's RIDICULOUS. I am now hangry almost 100% of the time.

I am allowing myself 2,000 calories per day, which is actually quite a bit! I try to keep it under 1800 most days, but sometimes I'll let myself go up to 2300 if I'm super hungry, which tends to be every day this last week. I'm pretty sedentary (that is going to change once my rowing machine gets here next week), but I do some walking during work, though nothing that would really influence my hunger (HIIT usually makes me super hungry).

I've also been making sure to eat a lot of protein, healthy fats, complex carbs AND fiber, and still nothing works! I eat every 3 hours, yet I am still super hungry to where my stomach is seriously growling to the point that I am vibrating!

I am also taking vitamins, fiber supplements, and drinking a TON of water. That's all I ever drink now, aside from my amino acid energy drinks and the occasional protein shake if I feel I've been skimping on protein. I've tried drinking tea (hate it) and broth, but nothing does the trick. I cannot sleep at night sometimes because I am so hungry. I will literally get out of bed at 2 in the morning and find a snack just to keep me satisfied enough to fall asleep.
And no, I am not menstruating nor ovulating either (my apologies for the TMI, just being thorough).

I feel like I am doing everything right, I am trying to eat a healthy, well-rounded diet, and yet I am still hungry. It's only been going on for the last 4-5 days, but it's seriously putting a damper on not only my mood, but it's making it difficult for me to want to step on the scale because I know I haven't been sticking to my meal plans due to the excessive hunger. And it's not just a little bit of discomfort from eating less than I used to, it's full-on "OMG I'M SO HUNGRY I COULD EAT A HOUSE!". I have yet to eat a house, but I can feel it coming on.

Any suggestions???? Anything helps at this point!

    I just ran a your numbers thru a TDEE calculator and got around 3150 for sedentary. (I used 25 for your age.) Why aim at under 1800? That's needlessly steep. I'd suggest sticking to a total of 2100 per day on average. Your hunger this week is likely your previous weeks catching up with you.
