Chicken/brown rice/ broccoli for work lunch

So this week I fancy taking the above for lunch at work.
My question is how do you stop it from tasting so dry? Do you add a little olive oil?
Any suggestions welcome

    I cook it in cream of celery soup and add some cheese. I think the trick is to add some sauce. You can try cooking the chicken separately in a foil pack in the oven. It maintains the moisture that way. You can then cook the rice in chicken broth and steam the broccoli and add the chicken after. I'd recommend at least some spice/herbs on the chicken while it's cooking. Cut the chicken up and add it after.

    I love this recipe. The only time it was dry was when I used quinoa which apparently takes significantly longer to cook:

    I only use half the cheese (ie I never bother to bake it with cheese). Still delicious.

    A friend of mine uses a Weight Watchers recipe that is more like a stir fry. Looking for the recipe now...

    If you cover your dish with a wet paper towel and put it in the microwave, it will create steam and soften the rice.

    Soy or teriyaki sauce if you like Asian dishes. Or some alfredo sauce mixed in.

    Seasoning your chicken - any flavors you like. I use a little olive oil, garlic powder, cumin, salt, and paprika.

    Try not to overcook, especially if you're going to reheat it. Add a splash of chicken broth if you're reheating to create some steam. (Cooking it with the bone in and skin on can help it stay moist, but it sounds like you're trying to eliminate a lot of fat.)

    Sauces also help. Mustard, chicken broth, garlic, and a splash of white wine. BBQ sauce. Teriyaki. Two-three tablespoons of marinara sauce and a teaspoon of Parmesan cheese will add about 50 calories and a lot of flavor.
