Spaghetti Squash
For me, the ultimate comfort food is a big bowl of noodles. A few years ago, I realized I have a gluten allergy so I switched to GF pasta. Lately, I've been experimenting with healthier alternatives- I've tried zucchini, shredded cabbage, and even broccoli (yum with pasta sauce).
I'm curious about spaghetti squash. However, I had it once years ago and it was so sickly sweet I couldn't eat it. Do you know any recipes that use it that aren't too sweet and gross? Is there a way to make it taste good?

I like spaghetti squash Carbonara, parmesan, 3 cheese, whatever.
Anything with a WHOLE bunch of cheese in it!!!
However, due to it's carb content, I can't enjoy it a whole lot1 -

Personally, I do like spaghetti squash, but it does have a "sweeter" taste than pasta.1

Spaghetti squash is fantastic with pesto. I like to sauté veggies, add some chicken, and mix in the spaghetti squash and pesto.

I roast it whole in the oven for about 45 minutes or an hour. Cut it open, scrape it clean down to the last strand. Save the seeds for drying and consumption.
When I use it, I like to toss it in a pan and get a little more roasted taste to it. Then I combine it with some of the toasted seeds, some textured veggies like sweet or hot peppers, and a protein.4 -
I cut it in half drizzle with olive oil, garlic and spices put face down on the pan and bake! While it's baking i sautée mushrooms, onions and then add at the end just to warm chopped tomatoes! Combine everything once the squash is done. So simple but so good ! The acidity of the tomatoes cut down the sweet of the squash!!5

I don't like Salsa personally, but this was very good.
You could put any chili recipe with it.
I have also had spaghetti squash made like traditional spaghetti and it is really good (surprised me).1 -

Going off a little bit: I didn't like the look of the spaghetti squash at the store this morning, so I got a butternut squash, which I roasted (whole: I'm very lazy) for an hour and will soon puree into a soup. I also got a about a quater of an acorn squash (I think), which I microwaved for about 5 minutes, after scooping out the pulp and seeds. I just finished making a quickie little batch of fritters out of that. They came out nice.2

I love spaghetti squash. I use under pasta or meat sauce, chili, stroganoff, bbq pulled chicken, any sauce. There are tons of ideas on Pinterest. I have used it in salads, soup like ramen. as hashbrowns. I have microwaved, roasted in the oven and even grilled. I made a recipe for philly cheesesteak spaghetti squash, it was delicious! here are some links to check out:
