No bake cookie/bar recipes needed
I'm trying to get my Xmas baking done, but getting access to the oven portion of the stove is, for some reason, impossible this year. I'll take anything that isn't a variation of the oatmeal-PB-chocolate drop cookies. That's the only recipe Google spits out at me when I search for no bake cookies.

Or there's a ton of no-bake cheesecake recipes out there.
How do you feel about simple candies? Like chocolate covered pretzels or peanut clusters. I've even seen recipes for candy/nut cluters made in the slow cooker.2 -
The Toronto Star does a Christmas Cookie Calendar, today's actually is a no-bake one! Cranberry-Lemon Oat.
My family does a chocolate-coconut-oat thing we call haystacks, as well as peanut brittle. I can shoot you both recipes when I get home if you want!1 -

I did a variation once with strawberries, sweetened ricotta with some vanilla, and whipped cream, and it was fantastic.0 -
Just made 'chocolate chip cookie dough bars' its a no bake, and a huge hit, just google it, very simple recipe and I was able to make it gluten and dairy free, without compromising it in any way.
Its almost like a cookie dough fudge and I topped my with a chocolate glaze.

If you can't even get to the stove just make truffles. You can heat up the cream in the microwave; the only other appliance you need is the fridge.0

Chocolate dipped Oreo truffles. They're to die for! I like to dip them in white chocolate or those vanilla-tasting Hershey's white chips to cut the chocolate taste a little, otherwise they're EXTREMELY rich.
The recipe is basically one family pack of Oreos (420g? Something like that.), 8 oz. package of cream cheese, and any chocolate that you like. Pulse the Oreos into crumbs, mix with the cream cheese, dip in melted chocolate. Voila!1 -

Yum! I did Nutter Butter cookies & cream cheese - dipped in chocolate. So easy (I recommend Wilton's candy coating).

I made a batch of cream cheese mints and I remember why I don't make cream cheese mints. All that hand mixing, ugh. At least I didn't have to press them into moulds this time.0

Here's a no bake oreo cheesecake bar recipe. This is vegan but you could totally make it with non-vegan/traditional ingredients.
