Ideally portable...my fiancé and I keep a restricted version of paleo (so no sweeteners) and eat hard boiled eggs and fruit most days after our workouts.

Chopped hard boiled eggs, cherry tomatoes and avocado. Add a splash of vinegar or lime juice to help break down the avocado and make it creamy. Pretty yummy.

Leftover cold broiled or smoked salmon and avocado is also a good breakfast. Or peanut butter and banana.

I too used to have hardboiled eggs as a snack but set them aside while we do Whole30 so I could have eggs at breakfast.

Here's what's on the menu this week:

You can make egg muffins in a muffin tin so that you can have a bunch prepped in advance and they are super portable. You can freeze them as well.

Egg, uncured bacon (that is Whole30 compliant, right?) with some chopped green/red peppers or mushrooms.

Leftovers recombined with eggs or other typical breakfast foods that you like.

My Japanese friend typically did this, and it was the best thing I ever learned. Made us able to have much fancier dishes for breakfast with very little prep time. As an example, when we had curry one night for dinner, then we had curried eggs the next morning. That sort of thing.
