Vegetarian Christmas dinner ideas?

I've been vegetarian for just over a year now. Last year for the holidays I just got a tofurkey meal and brought it everywhere. This year for some reason the stores near me stopped carrying them..? So I just talked to my dad who I'm doing a Christmas Eve dinner with and he wants to do a ham. He wanted to talk it over with me because of my "crazy diet" (his words. And he doesn't even mean my weight loss diet, he's just talking about not eating meat). Anyway, looking for a main dish suggestion that I can make for myself. Hopefully easy and not too time consuming too make!

It's not really Christmas-y but how about something like an eggplant lasagna? I make one with meat, but you can easily take it out and either substitute it with some veggie ground round or just add more vegetables.
Do you eat dairy? It does consist of cheese and a bechamel/alfredo sauce. But you can use red sauce as well.0 -

It's so funny you suggested this - my Italian grandparent's traditional Christmas dinner was a ham and lasagna! And an eggplant lasagna with a marinara sauce is definitely yummy!
If a lasagna is too complicated, some baked ziti made with a chunky tomato sauce or even a pasta salad with veggies maybe? Those could be used as a side dish with the ham so you don't even have to feel like you are bringing special food just for yourself! Not a veggie myself, but my "meatless" dinners are usually pasta related1 -
I'm sure you can figure something out, but i personally just eat "sides" on the holidays. i don't need some special "main" dish.

You do a stuffed acorn or butternut squash or a field roast.
It took years to get my fam to stop doing the same food for Christmas as we have for thanksgiving so we are doing chile rellenos. My sister and I are vegetarian so there will be plenty of cheese/veg ones.1 -
Take whatever food you like to eat and he can eat ham with or without it.
Macaroni and cheese, vegetarian baked beans
Stuffed potatoes
Bean, lentil or pasta salads
Broccoli cheese rice casserole is something my family likes and would go with ham.

I did a whole stuffed pumpkin one year, and a spinach roulade another time. The roulade was a hit with everyone, it looked pretty and tasted delicious. This isn't exactly the roulade recipe I used, but it looks delicous!0
