Gluten free vegetarian

Hello all! I just now re- signed up! The last time I logged in was 2011 ( and 7 pounds lighter). I am looking for recipe/healthy ideas for a vegetarian and gluten free diet. I have been a vegetarian for over 25 years and have newly become gluten free. I am trying to stay away from the over processed gluten free foods-breads, pastas, etc... Any ideas?

    I have celiac disease, and have recently started to feel ill with too much meat in my diet... so I am trending toward being a gluten free vegetarian myself.

    I am getting most of my protein lately from greek yogurt.

    I'm not sure if brown rice has gluten in it, but if it doesn't I have a recipe you might want to try! Here is the web address, I have made many changes to it to customize it and you can too. I used a red bell pepper instead of green, added corn, and took out the cheese, it's quite yummy and sometimes I et it with a gluten free tortilla :)

    I am also a vegetarian and will look through my recipe book for you! This recipe just came to mind first

    I am gluten/dairy free- I eat lots of nuts (individual packs so I don't go overboard), almond milk and protein shakes w forzen fruit, egg white omlettes with artichoke hearts, jalapenos..anything really..even a great recipes for some egg white quiche's with turkey bacon and brocolli! I am a big fan of the bags of indivudual frizen tilapia- easy to heat and throw on anything for some lean protein. Love fresh almond butter on apples as a snack.. also I lean turkey meat and a chili packet with kidney beans for a high protein meal or even just lean turkey with taco seasoning on top of a salad! Gogole Paleo recipes- lots out there! If you ever are feeling low on sugars/carbs- a sweet potato is the perfect pick me up! Best of luck!

    I've used almond flour to bread zucchini and chicken (which obviously you can't have) but just to illustrate, it works out the same as bread crumbs and is gluten free. Higher in cals though

    One of my favorites is butter chicken but since you can't eat the chicken you could do it with chickpeas or beans and then put it on rice to make a complete protein. My bestie does this and swears it's the best!

    Unfortunately Paleo recipes won't work for the OP as they are vegetarian and paleo has a higher focus on meat.

    The egg white quiche with turkey bacon could be made vegetarian by using a veggie substitute (Yves has a great bacon substitute). I'm not sure if the OP would go for fish... depending on the type of vegetarian they are. The almond butter on apples is a great idea (peanut butter, sunflower butter and cashew butter are also great!). The lean turkey on salad suggestion could be made vegetarian by using TVP instead of turkey with the taco seasoning and throwing on top of salad... add in some salsa and it's great!

    OP, there are tons of great gluten free items out there. Are you going gluten free due to a medical reason (either celiac or gluten intolerance) or are you just wanting to go gluten free because you think it's healthier? Brown rice pasta, quinoa pasta are both great. Seitan is amazing but if you had a medical issue with gluten you would have to avoid that. Mashed up lentils with some taco seasoning is a great taco meat substitution that you can put on top of salad or wrapped in a lettuce leaf (or a gluten free tortilla/taco shell). Cheesy rice (made with nutritional yeast or cheese along with some garlic and onion) is great with black beans on a tortilla. You can make gluten free tortilla's pretty easy with some gluten free flour.
