Healthy Breakfast/Lunch Ideas to Make a Week in Advance?

Any ideas for healthy breakfast and lunch ideas that I can eat away from home. I have a microwave at the office, but that's about it. Ideally I'm looking for ideas on things that can be made on Sunday for the entire week. Ideas?

My time is really limited most days and I find myself without breakfast/lunch most days and default to the crappy gas station food on the run.

I cook, portion and freeze so I can cook a lot in advance.

Make some egg burritos and freeze. Meal prep on week ends for casseroles that you can freeze in individual portions for the week (shepherd pie, lasagna, baked ziti, whatever). Anything prepped and refrigerated for more than 3 days tastes gross to me.

Breakfast: Oatmeal bake can be portioned and frozen (I add pumpkin purée and grated zucchini and use just a bit of sugar to sweeten), also you can sautéed a bunch of veggies, let cool, mix with beaten eggs, salt and pepper and a little Parmesan cheese, and bake in sprayed muffin tins. These can also be frozen. Serve with a couple of clementines for a nice breakfast.

http://www.wellplated.com/oatmeal-breakfast-bars/ are what I can easily make ahead, freeze, take to work, and reheat. Each one is a couple of hundred calories and if I wanted to add more stuff to the recipe I could. She has a bunch of other recipes on her site. I don't use them for this purpose, but I could.

I make a variation on these for breakfast adding my favorite veggies and then pop two in the microwave on weekdays: http://www.iheartnaptime.net/mini-egg-frittatas/

I make a bean-based soup and portion in mason jars. Easy to reheat, tasty and filling (lentil, black bean, garbanzo, etc). Also i do salads and they do hold up for the week- do heavy stuff on bottom, greens on top and dressing in small containers.
