Sweet & Sour Cabbage Rolls

1 pound lean ground turkey
½ cup shredded low fat Swiss cheese (optional)
½ cup fat free ricotta cheese
¼ cup egg substitute
½ cup onion minced
... 1/8 tsp. cayenne pepper
1/8 tsp. pepper
16 large cabbage leaves (steamed until soft)
Sweet & Sour Sauce
Cooking spray
¼ cup minced onion
1 ½ tsp. fresh ginger, minced
1 ½ tsp. tomato paste
1 8-ounce can tomato sauce
2 TBS orange juice
1 ½ tsp. red-wine vinegar
1 tsp. splenda

1. To make filling: In a large bowl, combine ground turkey, cheeses, egg substitute, onion and seasonings. Mix well
2. To form cabbage rolls: Place cabbage leaves on counter top or cutting board. Using a large spoon, place a rounded mound of turkey mixture ¼ inch from edge of each cabbage leaf. Fold top and bottom edges over filling. Then starting with filled edge, roll up tightly. Use toothpicks to secure rolls.
3. To make sauce: In a large nonstick skillet, heqt cooking spray. Sauté onions until soft but not brown, add ginger, and stir for 30 seconds. Add all other sauce ingredients and simmer for 5 minutes.
4. To cook cabbage rolls: Place rolls in simmering sauce, cover, and cook over medium-low heat for 20 minutes.

    Yum... I'm going to float around Google and see if I can find a recipe for sweet & sour sauce... I'm not a fan of bottled sauces. Luckily there's almost always a recipe!



    Edit: Found one!

    1/3 cup white or rice vinegar
    1/4 cup brown sugar
    1 tablespoon ketchup (Reduced sugar Heinz)
    1 teaspoon soy sauce (Reduced sodium)
    2 teaspoons corn starch
    1/4 cup water

    Mix the vinegar, brown sugar, ketchup, and soy sauce together in a small saucepan. Place these ingredients on the stove and brin. Meanwhile, mix the cornstarch and water together in a small bowl until they are smooth. Once the other ingredients are boiling, add the cornstarch and water, and stir them in until the sauce thickens. Remove the sauce from heat.
