Stepping things up

Hi there folks!
To start things off I'm a 31-year-old kidney transplant recipient. I was overweight while on Dialysis but I was more active then since I didn't have to do anything while not on dialysis. I weighed 234 lbs then but I was kept near dehydrated for medical reasons so who knows what my real weight was. I weigh 255 lbs now.
After my transplant, I didn't care too much about my diet because all of a sudden it was hardly restricted at all anymore. Though when I noticed I was 260 lbs I decided to try and be more healthy. I should point out I wasn't concerned with the number on the scale but with what I was able to do and how much energy I had. Long story short I didn't do much because I focused on job hunting and bringing my skills back up to date in my field.
In the last several months I've gotten a little bit of an exercise routine planned out and now I'm trying to nail down a "diet." I'm not too sure about things as it stands but I'm figuring things out as I go. The real kicker is that I have spinal cord damage and my left arm is just for show so I can't do a lot of standard exercises.
