    I've gone vegetarian for more than 7 days at a time plenty of times. Not sure why one would need to sign up somewhere to do that.

    I've done it since April and didn't need to sign up for anything.

    I always accidentally go vegetarian for extended periods when I get lazy. Like today: nothing but a bunch of protein powder, nuts, fruit, some potatoes, and my pre and post-lifting brownies.

    I've done the vegetarian thing before and gained weight while doing it :p

    I think I have way too many food texture issues to be able to have a balanced vegetarian diet, but I think the idea sounds very interesting. Seven days is manageable for trying something out, and people might find some recipes they enjoy or try a new food they otherwise would not have if they didn't do the challenge.

    It might also change the way someone thinks about vegetarian diets. I know I used to organize events and it would be incredibly frustrating when we had a vegetarian in the group, because invariably the vegetarian meal prepared would be "pasta with vegetables and some kind of sauce." They were always polite about it because they were used to people thinking "vegetarian means no meat, so anything without meat is ok," but seriously, some attempt to make the vegetarian meals as balanced as the meat offerings would have been nice.

    Ewww. I can be a vegetarian without beets.

    I do like the idea of a challenge to change perceptions, though. Like kgeyser said, a lot of people think all we eat are pasta and veggies, and that's far from the truth.

    It's funny, my niece is getting married in June, and my sister told the place hosting the event that they'll need a gluten free vegetarian entree. They sort of fumbled a little bit when given that tidbit. It's really not that hard.
