Just bought some for the first time. Was planning on roasting them, but I see a lot of recipes say to take the skin off.
Am sure I have eaten them in restaurants with skin on.
Any suggestions?

A lot of times, the skin on roasted peppers separates from the pepper and starts to peel off. If roasted over an open flame, then the skin will probably be charred too. If that's the case, peel it off. If the skin is still attached to the peppers after roasting, then there's no reason to fiddle with trying to remove it.1
