Roasted veggies with goat cheese

It's sooo good with a side of protein and you can eat lots as it's low in calories
Cut up sweet potato (small cubes) or butter it squash
Onions red peppers (these 2 are a must for me add a lot of sweetness and flavour) Brussels sprouts halved, some green beans. Toss them all in a couple of tbsp olive oil add thyme salt and pepper. Good mix and roast in a pan in oven until tender about 20 mins then crumble in some goat cheese. Depending on what veggies you choose you can figure out the calories yourself but I leave this in the fridge and eat it for a couple of days a big batch does my family. It's easy and soooo delicious
