Sauteed Veggies... (more like squash and zucchini)

I'm looking for anyone's spin on their sauteed vegetables. I honestly don't feel I will stray away from my ultimate favorite.. which is squash and zucchini... But if anything, if that's what you use, what spices do you use to saute them? I'm just checking out maybe new ways I can do it :)

    I love squash and zucchini too. Try adding chayote squash, onion and poblano peppers to it. You can garnish with a little cilantro so good. I used this recipe as a go by.

    Enjoy this traditional Southwestern dish of sautéed summer squash, onions and peppers as a side or as a vegetarian filling for tacos.

    1 tablespoon extra-virgin olive oil
    1 medium onion, chopped
    1 poblano or Anaheim chile pepper, seeded and diced
    2 cups diced zucchini
    2 cups diced summer squash
    1/2 teaspoon salt
    2 tablespoons chopped fresh cilantro, (optional)

    Heat oil in a large nonstick skillet over medium heat. Add onion and chile; cook, stirring, until soft, about 4 minutes. Add zucchini, summer squash and salt; cover and cook, stirring once or twice, until tender, about 3 minutes. Remove from the heat and stir in cilantro (if using).

    6 servings, about 2/3 cup each
    Per serving : 40 Calories; 2 g Fat; 0 g Sat; 2 g Mono; 0 mg Cholesterol; 4 g Carbohydrates; 1 g Protein; 1 g Fiber; 199 mg Sodium; 201 mg Potassium

    Exchanges: 1 vegetable, 1/2 fat


    I like Caponata too. I make Rachael Ray's from a pasta bake recipe, but I never make it into a pasta dish. I just enjoy the veggies. foodnetwork.com/recipes/rachael-ray/caponata-pasta-bake-recipe/index.html

    Squash and zucchini are my absolute favorite too! I recommend using the "veggetti pro" to make zucchini and squash noodles! Sooo good sautéed with garlic and oil.

    If you invest in one of these (about $20), I also recommend spiralizing beets! Beets and crumbled feta..another fav of mine.

    i just bought the Vegetti Pro at Walmart and it was only like $10. Couldn't pass it up. I have the regular Vegetti and it was somewhat hard at times to turn the squash to use it all up into noodles.

    My favorite pasta alternative is Yellow Squash noodles. Love them better that zucchini noodles. Think because the noodles aren't green lol

    Yellow squash and zucchini are a favorite in our house too. We usually use Weber Garlic and Herb seasoning or just garlic powder and pepper.

    I'm not a big squash fan, but zucchini is my JAM. I like it best roasted, but sauté is fine. I like it with onion, garlic, and ginger root (and usually mushrooms and either carrot or sweet potato).

    As for herbs and spices, it depends! I love smoked paprika, especially if there are mushrooms involved. I also like cumin--with oregano and ancho, or with marjoram and fennel. Sometimes I go with just rosemary.
