White Bean Crostini appetizer w/ PHOTO only 1 WW Point!

Along with the bruschetta I made for friends this weekend (yes, that is posted with a photo as well) I made these which were delicious! I wasn’t sure how they would be received since I thought they were a little different (I've never used white beans before let alone blended them into a gooie paste, ha ha!) but they were gobbled right up!
White Bean Crostini
White Bean Spread:
2 cups Cannelini or Northern Beans, rinced and drained (this is 1 can)
2 tbsp olive oil
4-6 tbsp water
1 tbsp fresh thyme
1 clove garlic
salt and fresh pepper
Crostini:
1 baguette/French stick
extra thyme for garnish
1 tbsp (approximately) balsamic vinegar
Directions: cut the bread into 1/2" thin slices. Toast slices under broil for approximately one minute. Purée in a blender all the ingredients for the white bean spread. If it's too dry you can add a little more water but remember it is a paste, not a smoothie Top each piece with 2 tsp of white bean puree and garnish with fresh thyme. Drizzle with a touch of balsamic right before serving. Serves 32.

They were really good and the one clove of garlic was surprisingly enough. After putting 4 into the bruschetta I feared I would go a little garlic crazy, ha ha !0 -
