Make ahead family meals- non crockpot

Any ideas for (healthy) make ahead meals I can quickly heat up on busy nights that I can make on a Sunday (my day off). No slow cooker/ crockpot available. No diet restrictions. Thanks!

I make a ton of soups, stews, chills, curries, casseroles, stuffed peppers, meatballs, meatloaf muffins, nuggets, and freeze.

I make Chicken Muffins on Sunday to eat during the week. Ground chicken 1/4lb weight each. I mix in either salsa, Havarti cheese, spinach and feta or mushrooms and feta. Calories go 180 to 280 depending on what's in them . Bake in Muffin pan for about 45 minutes or golden on top !2
