Cold rice?

Hi im making a chicken salad and wanted to know if I can cook some brown rice and cool it in the fridge, then add it to the salad within a few hours i know rice is a bit iffy like that so wasnt sure.

    Should be fine. Rice is really only a problem after maybe 24 hours out of the fridge. 48 if kept in. Thats from my experience. Others may vary.

    Of relevance - sushi rice and rice for stir fries is cooked an then left to cool - this often takes time.

    You might like top cool the rice like sushi rice is cooled - spread it out in a big bowl and waft it with a fan. Great way to get some extra exercise;)

    Sure, why wouldn't it be fine? I often cook a big bowl of rice to keep in the fridge for recipes throughout the week.

    Rice keeps well in the fridge. Fried rice is actually better with day old rice.

    There have been scarey stories about rice, if improperly handled.

    I've left a pot of rice on the stove overnight and eaten it throughout the next day. Never had a problem.
    No harm in being careful, though.
