A different but easy & nutritious vegetable side dish.

Beets, red cabbage, shallots (or onion), dressed in olive oil, balsamic vinegar, and Chinese Five Spice powder (or other spice) in the oven.

No numbers given because the calories, etc. will vary with your own amount of each vegetable,
  1. Preheat the oven to 400F.
  2. In an oven-proof dish, toss peeled & cubed beets, chopped shallots and coarsely chopped red cabbage in enough olive oil to lightly coat the vegetables and the baking dish.
  3. Add a good deal of balsamic vinegar, 1/4 to 1/2 cup.
  4. Optionally, sprinkle on Chinese five spice powder, salt and pepper, or other spices.
  5. Toss to distribute the spices and vinegar.
  6. Bake in the middle of the oven for approximately 1 hour, stirring every 20 minutes or so, until the beets can be easily pierced with a fork and the cabbage is carmelized on its edges. If the cabbage gets too dry, cover with foil for the remainder of the baking time.
