Looking for a Vegetarian Stuffed Pepper Recipe

Hey cooks!
Just looking for a stuffed pepper recipe that includes the use of Curry powder. I had stuffed peppers like this Years and YEARS ago but I never got the recipe for.
Any good recipes out there?

    OMG! I have to share the best recipie with you!!!! I love stuffed peppers.

    Ingredients (feeds four people):

    - 4 red, orange, or green bell peppers.
    - 2 cups of cooked brown rice (if you do not like rice, use chick peas or quiona)
    - 1/2 cup minced onion
    -2 tsp garlic
    - 3 medium mushrooms chopped
    - 1 large shredded carrot
    - curry powder ( however much you desire)
    - pinch of ground pepper
    - tablespoon of olive oil

    Directions: pre heat oven to 350 degrees. In a large frying pan, cook mushrooms, garlic, shredded carrot, and onions until soft. Mix rice, onion, garlic, shredded carrot, pepper, mushrooms and curry powder in a large bowl. Cut tops off peppers and fill with stuffing. Bake in oven until peppers are soft to your liking (about 25 minutes).

    This is a simple recipe and I love the dash of curry powder for a great flavor. They are low calorie also! You can mix and match veggies as well.

    I also have a great vegetarian recipe that I love! I just replace the ground beef with veggie chorizo. It gives it a little kick and lotd of flavor. And I just made it again last weekend. Only, instead of stuffing the peppers, we diced the peppers and threw them into the rice mixture almost like a hash. It's delish!

    4-5 whole bell peppers for stuffing
    2 cups cooked brown rice
    2 large diced onions
    1-2 tablespoon minced garlic (depending on your taste. My house enjoys garlic)
    1 package veggie chorizo
    1 diced pepper for mixture

    In a large frying pan or pot (I prefer to use my cast iron pot) heat the chorizo until it is well heated through. Remove from pan/pot and set aside. Use 1-2 tbsp. olive oil in same pot and add in onions and diced pepper. Cook until onions are brown. Toward the end of cooking, add in garlic and any other spices (salt and pepper, paprika, red pepper, etc.)

    Mix rice mixture with cooked onions and chorizo. Stuff peppers. Place in preheated 350 degree oven until peppers are fork tender or soft to your liking.
