Ratatouille
2 T. Olive oil
2 bell peppers, coarsely chopped
3 or 4 small zucchini, cut into ¼ inch slices (optional)
1 large onion, quartered and sliced
1 eggplant, cubed
2 or 3 cloves of garlic crushed and minced
4 large tomatoes, coarsely chopped or 2 cans diced tomatoes
1 tsp dried basil
½ tsp oregano

Combine first 2 ingredients and cook 2 minutes in microwave.
Add zucchini and cook 1 minute more.
Add onion and eggplant and cook 3 minutes.
Add all other ingredients and cook 4 to 6 minutes until as
tender as you want it. Serve warm. Keeps well in refrigerator for
several days
