Hi MFP friends ...If anyone one likes to share recipes (with or without pics) on their timeline please add me ! Any even if you don't ...add me anyway for support on this weight loss journey. Thanks yall.

    Right now I'm enjoying a sweet potato-onion soup I threw together in my Vitamix:

    2 nice sized sweet potato. Wash well if you want to use the skin (I do).
    About half an onion.

    Roast the potatoes. Saute the onions in a scant drizzle of oil. Season to taste.

    When the potatoes are done, let them cool down a bit while you toss together 4 cups of low-sodium chicken broth (I found Rachael Ray's brand). Season it up to taste.

    Throw everything into the Vitamix and let it go for about 30 seconds.

    Makes about 8 cups as is (very thick). You can dilute with water.
