I always find myself making something different for my kids because they aren't touching the salmon or salad I make regularly. So any good options they might like would be greatly appreciated.

"Healthy" has different definition and includes a lot more than fiah and salmon. Open up you specifications a little and a lot of kid friend meals are "healthy".

My kids don't mind this salmon, they don't love it, but they'll eat it:

I also make them eat Tilapia often but let them put bbq sauce, or steak sauce on it.
Turkey tacos are good (you could even skip the tortilla and have a taco salad).
My kids love red beans and rice w/ turkey sausage.
English muffin pizza on whole wheat english muffins with ham (less cheese on yours).
    Shredded chicken BBQ sandwiches
Pork chops w/ a side of some kind, and you can replace your side with a salad.
Chicken stir-fry w/ sugar snap peas (my kids love these) over rice.
Jennie-O Turkey ham w/ scrambled eggs.
