Cauliflower pizza crust

Hi group members, Veronica asked me to share this recipe I put together from a couple diffent ones I found. Very tasty and unexpectedly good.

2 1/2 cups cauliflower, grated or chopped in food processor until crumbly
1 large egg
1 cup shredded part skim mozzarella cheese
2 tbsp parmesan cheese
Kosher salt
Fresh ground black pepper
2 cloves garlic
1/2 cup ground almond meal/flour
2 tbsp cream cheese

Microwave cauliflower for 6 to 8 minutes to soften. Remove from microwave to cool. Mix in remainder of the ingredients and microwave 1 minute to soften cream cheese. Mix completely.

Once combined pat into 10 inch round on parchment paper. Bake at 425 for 10-15 minutes until brown.

Remove from oven, top with 4 tbsp pizza sauce, 1/2 cup cherry tomatoes cut in halves, 1 to 2 oz pepperoni, 1/4 cup shredded mozza. Place back in oven for 5 minutes. Remove and top with fresh chopped basil, splash of olive oil, baby arugula and salt and pepper. Bon appetit!! I'd add pictures but I can't figure out how

    Don't you have to squeeze all of the water from the cauliflower?

    I need to try and find a better way to make a cauliflower crust without cheese! I tried once before and it did not work out so well, haha!
