Low carvers do you find you eat more vegetables now?

I'm doing the South beach and I eat WAY more vegetables than I ever did before. I don't get how people can lay claim to the idea that we don't get enough nutrients. I get mine from vegetables, nuts and meat. Next week I start adding low glycemic load foods like berries and legumes.

Every primal/ paleo recipe I see is chalk full of vegetables. What gives?

I'm eating a higher % of fat but when you look at my numbers the fat in grams is not crazy.

All I can ever think is that anyone that just goes hog wild with sausages and prepared meats doesn't really get the diet holistically.

    Possibly a bit more in that my old starchy plate fillers like noodles, rice, corn or bread is gone so vegetables will take their place.

    I'm not a huge eater of veggies. More than some, less than others. Today I had some cucs, a bell pepper, onions and a bunch of nuts. Some days are more than that. Other days are less.

    I eat mostly keto carb levels with largely a primal menu.

    Applause! I reduced my carb intake only moderately (aimed to hit around 100 grams) while losing weight, upped my fat accordingly, but OMG, my consumption of vegetables skyrocketed. I started to cook more from scratch, just because it's fun and easy and this diet is delicious. I have reintroduced more carbs in maintenance, but when the fear of fat is gone, I have a craving for vegetables, and they are so easy to incorporate, raw and cooked, in my meals.
