One of my favorite vegan recipes is just sauteed vegetables with minced ginger, garlic, amino acids (instead of soy sauce) & olive oil. You can use whatever veggies you like but I usually use carrots, snap peas, broccoli, edamame, & red peppers. Then put the veggies over cooked soba noodles. salt and pepper to taste. It's so yummy.
Here's the ingredient amounts:
1/4 tbsp - minced ginger
1/2 tbsp - minced garlic
1 or 2 tbsp - amino acids
1 tbsp - olive oil (this is optional)
1/2 cup each kind - chopped veggies (1/2 cup carrots, 1/2 cup broccoli, etc...)
if using edamame, I would only use about 1/3 cup
1 cup - cooked soba noodles (directions for cooking the noodles should be on the package)

I find asian food is really easy to make vegan, swap fish sauce for tamarind, oyster sauce for oyster mushroom sauce etc. I am planning a vegan banquet for friends and am serving:

Salt & Pepper Tofu
Steamed BBQ Red Lentil Buns
