Tonight I Julienned 3 zucchini, with the Kuhn Rikon Julienne Peeler, that I picked up on Amazon for $15.00

In a skillet, I melted 1 tsp of real butter, and added

1/4 C...diced onion...(I used the diced frozen onion from whole foods)
1/4 C...diced green pepper...^^^Same
1 Roasted red pepper strip chopped
1 TBS. Lindsay diced Pimientos
2 tsp Minced Garlic
1 tsp Onion Powder
1/2 tsp sweet basil
1/2 tsp fine crystal sea salt
1/2 tsp turmeric
1/4 tsp cayenne pepper..(skip it if you don't like hot)...or use regular pepper

Then stirred for about a minute, and added all the Julienned strips of zucchini
Continued stirring until the zucchini "pasta" was softened...about 5 minutes
Poured the "noodles" mixture onto a serving platter

Returned empty pan to stove, and on low/medium heat added:


2/3 C Fage Plain 0% fat yogurt
1/2 C 2% Milk
1/4 C Organic Valley heavy Whipping cream
1 ounce Organic Valley cheddar cheese
a dash of pepper

Stirring while the cheese melted and it slightly thickens...about 5 minutes

Poured it over the plated zucchini pasta,
Then topped with a sprinkle (about 2 TBS), of fresh grated Parmesan cheese <<<(Thanks NaticksDonna)

This was not only simple with the tool from amazon, but tasted wonderful, and took all of 15 minutes to prepare!

3 zucchini, entered as 1.5 on the recipes,because you do not use the center where the seeds are. If you youtube, "Zucchini" noodles, there are some very quick videos on how to julienne the zucchini...I feel the "TOOL" is a $15 MUST!

This dish yields 2 nice size servings.
