Yep ... my food prep involves ensuring that I've got a week or so worth of single serve rice packets and tins of chicken in my drawer at work ... and about a week's worth of single serve steam-fresh veggies in my freezer, and a tray of single serve yogurts in my fridge.

I don't enjoy microwave reheated meat, so I don't prep that way. I do plan out groceries and meals every few days and keep stocked.

5 x chicken stir fry for dinners in the freezer, - used the recipe builder, weighed out 5 x cereal portions for breakfasts at work and made a chicken salad for lunch tomorrow plus two snacks

I've finally discovered meal preparation is the key and I log my food for the next day so I know exactly what I'm having

Here is my chicken stir fry recipe for 5 portions at 310 grams each and 358 calories per serve, next time I'll leave out the mung beans as they have too many calories but I did also add half a cup of water and chilli flakes and lots of black cracked pepper

Here are some homemade hot pockets that I make and freeze every few months. I think this photo had BBQ chicken ones and pizza ones.

Here is an egg casserole that I made and portioned. It has homemade pico de gallo on it.

I enjoy cooking, so I do a lot of meal prep. This weeks menu was homemade burrito bowls. Photo: Black bowls contain cilantro lime rice and marinated/grilled chicken; baggies have 1.5 oz Monterey Jack cheese; small ball jars have corn salsa.

How do you make that rice? I would love to make those! Very chipotle-esque. What's in your corn salsa?

How do you make that rice? I would love to make those! Very chipotle-esque. What's in your corn salsa?

    I use the following recipes:

    http://www.skinnytaste.com/chipotle-cilantro-lime-rice-4-pts/
    and
http://www.skinnytaste.com/corn-salsa-with-lime/ ( I also add a tsp of cumin to this recipe, because I like the taste)

    Then for the chicken:

    Juice of 1.5 limes
    1/4 cup olive oil
    1 tbsp Tomato Paste
    1 envelope taco seasoning
1/4 container of chipotles in adobo (2-3 peppers and sauce)
    1/4 cup water
    - Blend all those together in a blender, then put 2.5 pounds chicken tenderloins in a gallon ziploc bag, add the marinade and put it in the fridge for 4-6 hours. Then grill.

ETA - The chicken makes 10 servings, so I adjust the above recipes to also make 10 servings.

    Prepare to be amazed

(Honestly, this is as much as I do and I commend anyone who actually puts the time in to prep their week.)

    I laughed!

    Thank you <3

I nearly bought some meal prep friendly tubs this weekend. Then had a word with myself about the likelihood of me using them more than once. I commend everyone who does this, it would make life a lot easier. If someone wants to lend me a brain that actually works just for like, a few hours on a Sunday, that would be splendid.
