Spelt flour

I read somewhere that Spelt flour is good for baking, so can I use it as a dredge for my chicken? I always remove the skin first...

    Spelt is a variety of wheat, isn't it? If you can use wheat flour, you can use spelt. Why do you remove the skin (that's the best part)?
