The best time of the day for me to work out is typically around 8 or 9 pm. I don't know why but when I'm done I am literally, physically so hungry. I have a fairly low calorie intake of around 1200 and I burn roughly (according to the machines) 400-500 calories in a little over an hour of working out. I don't know if this has much to do with it or not...
But I guess my question is, should I ignore this like I've been doing or is it okay to have a small snack? I've heard rumors that eating shortly before bed leads to weight gain.

It doesn't cause weight gain- that's a myth. If it fits your calorie goal then go for it. Personally I find both working out,and eating, just before bedtime disturbs my sleep but if you're OK with it then do it!0

Plus, are you eating back those calories or are you sticking to 1200 even on workout days?0

I eat right before bed pretty much every day. Hasn't slowed down my progress one bit. The only thing that matters is eating fewer calories than your body uses in a day.2

Yes.
You should aim to meet no less than 1200 per day2 -

Yes - you should! Especially if you're only on 1200 a day. That's probably why you're hungry after working out!1 -

Yes!
Your calorie goal on here (which may even be too aggressive a deficit...) isn't 1200 cals it's actually 1200 cals + exercise calories.
No surprise you are hungry.
And no eating to your food allowance late in the evening doesn't lead to weight gain - that's a myth.2 -
Eat a snack that combines protein and carbs - i.e. chocolate milk, a half sandwich, etc. to help rebuild your muscle and give you energy. Just make sure you don't eat more than you burned.1

I usually have a protein shake and banana or apple after my workouts which are almost always later in the evening. I try to get the protein to carb ratio at about 1:1. It hasn't hindered my weight loss as I've lost about 25 lbs in 11 weeks.0

You're hungry because you're not eating enough for your activity level. And no...eating before bed does not lead to weight gain...I eat dinner most every night around 8:30 and I'm usually in bed by 9:30.0
