Simple, delicious and nutritious...

in a bowl mix 2 cups coconut milk (I used unsweetened 50 cals / cup)
225 g frozen raspberries, thawed
1/2 cup chia seeds
2 tsp vanilla
2 tsp (or to taste) swerve sweetener

mash the raspberries in the bowl add all ingredients and mix well. Chill for at least 4 hours. Makes 4 quite generous helpings...if you put it down to 6 servings the calories are about 108 / serving...with an impressive 13 grams of fiber and 4 g of protein!! Easy to make ahead.
