What is the best way to store pre-cut veggies and are there any that you just really shouldn't cut in advance?

    If it were me, I would store them in clear containers -- either a plastic bag or some sort of tupperware type container that you can see through and I'd place it in the refrigerator at eye level in the front of the shelves so that you see it every time you open the refrigerator.

    I don't cut up any in advance. I cut when I cook. I don't snack on raw veggies either.

    Almost all of my veggies are cooked, since I'm bulking I can eat more that way.

    Each veggie has different storage options and shelf life - onions can be chopped and stored for 5+ days, but lettuce, for example, only lasts a day or 2 if you cut it, but you can store the leaves whole.     Most root vegetables can be prepped, cut and stored in cold water.

    The best ones to prep ahead:

    Plastic wrap/bag/Tupperware:
    Sweet potatoes
    Brussel Sprouts
    Cabbage
    Onions
    Celery
    Carrots
    Squash
    Green beans

    In a bowl of water:
    White potatoes (Only a day in advance and for mashed potatoes only)

    The worst:

    White potatoes (for anything other than mashed potatoes and outside of water)
    Tomatoes

    I find veg goes off quicker if it is in plastic.

    On a Sunday I cut 4 350g punnetts of mushrooms and place in a paper bag in the fridge.
    A 1kg bag of white onions, I leave them loose in an open container.
    The rest I like chopped on the day.

    Oh -- I buy huge bags of bell peppers to save money, cut them and freeze them in little baggies. I just chunk them in when I sautee other vegetables.

    If you're more likely to eat more veggies if they're ready to go when you're ready to cook/eat, then go for it! But you probably lose a little of the nutrients when you store them chopped. I chop and freeze some things like peppers, carrots and onions.

    By the way, you can cut up (or food process!!) onions and freeze them into bags. Makes cooking extremely easy... but I don't like doing that with any veggies that you want more of a "crunch" to; it's more for soups sauces etc.
