anyone have any good slowcooker/crockpot recipes? ive dont the usual chicken/beef stews. curries etc

    I have this going in the crockpot right now. I'm going to make the rice in my rice cooker so the boys can have it with their dinners, but I can leave it out.

    Easy Crockpot Jambalaya

    2 pounds boneless, skinless chicken thighs
    1 pound smoked sausage, cut into 2-inch slices
    1 large onion, chopped
    1 large green bell pepper, seeded and chopped
    3 stalks celery, chopped
    1 (28 oz.) can diced tomatoes with juice
    3 cloves garlic, chopped
    2 cups chicken broth
    1 tablespoon Cajun or Creole spice mix
    1 teaspoon dried thyme
    1 teaspoon dried oregano
    1 pound extralarge shrimp, peeled and deveined
    1 3/4 cups long-grain rice
    Parsley, optional

    Preparation
    Combine chicken, sausage, onion, green pepper, celery, tomatoes, garlic, chicken broth, spice mix, thyme and oregano in a large (5-quart) slow cooker. Cook on low for 5 hours.
    Add shrimp and rice; raise heat to high and cook for 30 minutes more. Sprinkle with chopped parsley, if desired.

    Creamy Green Chile Chicken Chili

    1lb boneless skinless chicken breasts
    2 cans great white beans
    1 15oz can corn
    2 4oz cans green chilies
    3 cups chicken stock
    1/2 tsp chili powder
    1 tsp salt
    1 tsp cumin
    3/4 tsp oregano
    1/4 tsp cayenne pepper

    Put in crock pot and stir. Cook for 8 hours on low or four hours on high. After it's done, add 4oz low fat cream cheese and 1/4 cup ff half and half. Cook on high for 15 mins. Stir and serve. Very yummy!

    Pork Ragu -healthy :)

    1 boneless pork shoulder
    1 diced red onion
    1 large can diced tomatoes (we've tried different variations, too... Like adding a jar of carmelized onion tomato sauce and it's delicious)
    3 bay leaves
    Salt, pepper to taste
    (My husband likes to add red pepper flakes)

    Set on low for 10 hours.
    Stir. Enjoy!

    I serve it over chickpea pasta. Filling, warm, delicious!

    You can add veggies, also! We've tried zucchini and peppers and both are yum!
