Cooked vs. Uncooked

I'm somewhat frustrated as I sit here after eating 6 oz. of cooked top sirloin. I feel like ive been doing it wrong. I weighed the food cooked after I trimmed the fat. So it's a grilled lean 6 oz. of top sirloin. How much difference is there between that and the uncooked, untrimmed 6 oz.?
Another question. I've been just throwing my chicken breasts in the crock pot and shredding, then weighing out 6 oz. for each meal. Is there a big difference here as well?
Either way it appears I've been slightly over the calories I thought I was consuming.
Any ideas to make this easier would be appreciated. Thinking about cutting meals down to 5 oz. cooked and trimmed. That would probably take care of it so long as it's the same amount of protein.
