As a retired chef here is how I prepare Chicken if I am poaching it for meals like Chix noodle soup or some other recipe that requires chix.I preheat heat the water to boiling and then turn it down to simmer. I place the Chix in the water and then let it simmer until it is done. The water has 1TBS. per cup of water to add some flavor to the chix. I then drain it and if I am shredding it I place it into a bowl and take a mixer either hand held with beaters or a stand mixer with the paddle and let it shred the chix for me. Does it in 1/2 the time.I am then ready to incorporate into a meal or I can freeze it at this point. I usually do breast with rib meat or tenders. You can use any piece of the chix you would iF IT IS NOT BONELESS REMEMBER TO DE-BONE IT BEFORE SHREDDING. I hope this helps.
