calf definition when you have cankles.....

Hey folks,
How do you get calf definition when you have cankles?
I know the fat has got to go to reveal the muscle underneath and I am already eating at a calorie defecit to tackle this.
But the muscle needs developing and I can do that whilst the fat comes off, and I should be able to assess improvement by feel even if I can't see it yet.
I have no idea what exercises I can do that will improve my calves.
I do leg presses, and that's the only thing in the gym that jumps out to me that may help....of course I am presuming this does but I don't actually know for sure.
There has to be more than that surely?

Calf raises are the main exercise I use to target my calves. But I also feel them work during squats and deadlifts.1

I'd say specifically, seated calf raises. And for maximum definition, really squeeze them at that top position and lower very slow (full range of motion).
