I've discovered zucchini pasta!

This is an AMAZING dish. I replaced most of the noodles with zucchini, and it was sooooo good! Going to prepare this next week with grilled salmon on top.

    Try Spaghetti Squash as well; resembles angel hair pasta. Microwave it for 3 minutes then bake for about an hour at 245 degrees. Remove seeds and scoop into a bowl.

    •4 oz cooked spaghetti squash (¼ lb): 5.5 grams effective (net) carbohydrate plus 2 grams fiber and 30 calories

    Plus I took the leftovers and mixted it with yellow mustard to make a mock sauerkraut to have with my turkey dogs.

    Yes it's good. You can make it as ribbons using the potato peeler or as spaghetti strands with a special tool that cuts that shape strips. It's yummy.

    spaghetti squash I finally tried and it's good with butter and salt. I don't like it with any kind of pasta sauce. In general I like things to be what they are.
