Search coconut curry lentils. Almost any recipe will work. I use a basic recipe (I don't even know what blog it's from), and add whatever spices/seasoning I have on hand. Usually always curry powder or paste and coconut milk, but Indian spices like cumin seed, jeera, and anjawain seed are added based on whether or not I have them.
I make burgers with a mashed sweet potato, seasoning, breadcrumbs and an egg. You can really add almost anything to drained lentils and a binder (egg) to make a veggie burger out of it. I did cauliflower and spinach once.

A good seasoning combination for lentils or any other legumes is black pepper, salt, rosemary, garlic, allspice, and maybe a little olive oil.0

This is great, it was originally in Better Homes an Gardens in the late 70s and I've been making it ever since! It's very easy to make, literally one dish. The only prep is to shred cheese and chop an onion!

You could easily use quinoa instead of rice or add some shredded chicken, if you like.

I second making a pot of curry lentil with coconut milk and perhaps some meat/tofu. Make enough for leftovers and add it to steamed veggies when you eat. I use Mae Ploy curry paste so it's very easy to mix up, no extra spices are required.1 -
Basic Scottish lentil soup:
1 cup red lentils
3 cups stock (ham is lovely, chicken or veg is fine, cubes or powder are absolutely fine, you can even use water but you will need plenty of salt in that case)
1 medium onion, chopped
1 large carrot, diced
1 medium potato, diced
Fry the onion until soft. Add the carrot and potato, fry briefly, then stir in the lentils and add the stock. Cook:
- about one hour on the stove top
OR
- in the slow cooker, 4-5hr High or 8-10hr Low
OR
- in the pressure cooker, 5min at 15psi (high pressure)
This is meant to be a thick soup, but if it's too thick, just add hot water. Leftovers will thicken on cooling and will need to be watered down. Don't skimp on salt here, your stock needs to be full strength and if it comes out bland, you need to salt it well. The flavour is coming from the lentils themselves - red lentils have a really nice flavour of their own, but like most pulses, the flavour will not come out without salt. It will just be a big bowl of blandy mcblandface if you undersalt it.
Note that the lentils will disintegrate on their own to make a smooth soup, no need to blend it.2
