So I'm good for breakfasts, I love my smoothies, and I have a ton of great dinners that I can cook for myself and my fiancé. But I can never figure out lunch. I'm a stay at home Mum, so I'm home with bubs during the day . Trying to find healthy and tasty lunches for one.

I like to have sandwiches, wraps, crispbread, boiled eggs, leftovers, porridge, noodles, hot cocoa, yogurt, in addition to raw vegetables and fresh fruit for lunch.1 -
I also have trouble with lunch. Lately I've been making sure there are some dinner left overs. Sometimes I plan a couple of dinners that will provide good leftovers such as tacos so I have meat for a taco or taco salad. I also often make a soup for dinner and then with just two of us there are a couple of days of leftovers. I have been trying to get protein in at lunch to hold me so for me that means adding a 1/3 cup of cottage cheese to my plate.0

I meal prep on Sundays for lunches for me and my husband. I roast up a ton of veggies and sweet potatoes with herbs and sautée, grill, or bake chicken with different herbs flavorings. You are set up for success with meal prep! Good luck!1

Also, keep canned tuna, hard boiled eggs and cut up veggies around for quick things to add.

I'm a sahm of 3 kids who do their schooling at home, and I typically rotate between Lean Cuisines with a bag of veggies and canned chicken added, rice bowls with rice, canned chicken, frozen veggies and sweet n sour sauce, and then since I'm participating in the 800g a day veg/fruit challenge, I'm also incorporating salads into my rotations. But, these aren't your average, wimpy salads-these beasts fill mixing bowls
Yesterday's was spinach, lettuce, canned chicken, pepperoni, bacon, tomato, onion, mini sweet peppers, cheese, Fritos and black olives-mixed with French dressing and sour cream. It was epic lol.
