Mini Pita Burgers With Cucumber Mint Salad

1 tablespoon mayonnaise
1 tablespoon lemon juice
1/4 cup chopped mint
kosher salt (optional)
2 large cucumbers, peeled and thinly sliced
1/4 cup grated onion (1 small)
1/4 cup chopped parsley
1 1/2 teaspoons cumin
1 teaspoon dried garlic
1 teaspoon paprika
1 teaspoon coriander
2 pinches salt
1 pound lean ground beef (I used turkey meat instead of ground beef less than calories)
4 whole wheat pitas (6" diameters),halved


Directions
1. Preheat the grill. 2. In a medium bowl, whisk together the mayonnaise, lemon juice, and mint and kosher salt (if using) to taste. Add the cucumbers and toss. Set aside. 3. Place the onion, parsley, cumin, garlic, paprika, coriander, and salt in a medium bowl and stir until thoroughly combined. 4. Add the beef and blend the mixture into the meat with your hands. (Don't overhandle the meat or the burgers will get tough.) 5. Form the beef into 16 mini patties and grill until cooked through, 3 to 4 minutes per side. 6. Meanwhile, lightly warm the pitas in a toaster. 7. To serve, stuff each pita pocket with 4 or 5 cucumber slices and 2 burgers and drizzle with the juices from the salad. Serve the remaining salad on the side.
