We're starting paleo and meal prep next week! Does anyone have any tips for meal prep to make it easier to get started and keep on it?

    Prep for any way of eating is really about planning.

    Write a list of 5 to 10 meals, batch buy, batch cook and store (working out what will freeze and what must be chilled).

    Paleo specific tips
    • Boiled eggs make a simple snack
    • Sweet potato mash is an easy batch prep (as are most mashed root vegetables - parsnip is v. good)
    • Beanless chilli works well (assuming you're OK with tomatoes - some people exclude nightshades)
    • You can batch prep bacon in the oven - it's much easier than in a pan - just lay it out on tin foil and bake until your required level of crispyness
    • Most grilled, steamed, or fried fish is good for a few days
    • Batch cooked chicken breasts are easy - either fried in a pan, as a traybake, or crock-pot.
    • Crock-pot joints - especially pulled pork is an easy prep
    • I make a big fritatta type bake - 12 mixed eggs, whatever veg I have to hand, throw in some bacon, and bake it for 30 mins (until egg is solid) at abotu 160oC - that makes 4 portions.
    • Whenever the oven is on, I'll make a big batch of roasted veg - whatever we've got - carrots, parsnips, sweet potato, butternut squash, aubergine, cougette, onions...
