I am having chicken thighs in sauce with cauliflower fried rice. I found an absolutely fabulous recipe for the cauliflower - combines carrots, peas, soy sauce, onions, spices, egg and the cauliflower and according to the MFP recipe builder, I can get 6 serves of 138 gms each for 143 calories. I like it very much - I am not much of a rice person, but I love cauliflower and this is just another way for me to satisfy my tastebuds. So for me, the whole dinner of two thighs and the "rice" comes out to 430 calories, leaving plenty for popcorn or cracker chips as a snack for later.

Today is a "fast" day so it's either egg whites or non-fat sugar free Greek yogurt.
