Should I be super concerned with carbs that come from low starch veggies? IE cauliflower, squash, spinach...

    Do you have a medical issue that requires you to limit carbohydrates? If so, those carbohydrates still count.

    But if you don't have a medical issue, no carbohydrates should particularly concern you. They're just a type of macronutrient and that's true whether they're found in cauliflower or a hot dog bun.

    If you're low caloric, no. If you're low carb, yes. However, if you are low carb, you can subtract the dietary fiber from the carbs to get the net carbs.

    Yeah, depends on why you are watching carbs. If you are trying to be keto, yeah, all non fiber carbs matter. If not, I wouldn't worry about carbs at all, but focus on getting enough protein, healthy fats, fiber, generally good balanced nutrition. If you are T2D, do whatever your doctor or RD said, but usually balancing carbs with fiber and protein and fat is enough so non starchy veg (which are low calorie, so low in total carbs, and have fiber) would be unlikely to be an issue.
