Healthy lunch ideas anyone?

I am a huge fan of vegetarian soups. I like to batch-cook and keep many different kinds in my freezer. These are some of my favorites. They are all simple, delicious, have great macros, and I look forward to eating them.
1. Lentil soup (I use a can of crushed tomatoes and cut up a whole bag of baby carrots. Important: add a splash of balsamic vinegar to each serving just before eating--amazing!)

2. Curried split pea soup (I use half the butter and vegetable stock.)

3. African peanut stew (Got this here from another MFP member--I use a box of frozen chopped spinach and add cooked quinoa just before serving.)
