I'd like to share, I made it again today: it's 8 servings, 163 calories per cup. 1 lb lean ground turkey, 3 Tbl olive oil, chopped half onion, garlic, 1/2 cup red lentils, 6 oz red potato, chopped fresh spinach, 1 lg zucchini, 1 cup baby carrots, 2 Tbl chi seed, chopped fresh kale. 2.5 cans (14 oz ea) low fat beef broth. Saute onion in olive oil, add garlic, add ground turkey, cook till almost done, add veggies (any kind YOU like) add broth. add potato, red lentil & chi seed last 15 min. sprinkle with Parmesan cheese. Yummy
One more: bring pinto beans to a boil, turn off stove & let sit for 1 hr with lid on. Rinse, then add as much fresh veggies as there are beans, try to use more hearty ones, like broccoli, add broth to barely cover, cook 1 hr or until done. I use my stick blender to whiz up. You can also add some meat for flavor like ham or bacon. enjoy1 -
