Low Calorie Stuffed Peppers

I wasn't sure how these would come out but oh my goodness they were sooo good I thought i'd share. I used in each pepper half a cup of green giant cauliflower rice, 1 oz of jenny-o ground turkey, 1 oz of sauteed onion, and a quarter cup of contadina tomato sauce. each pepper ends up only 140 calories and once baked you can't tell its not rice. These are perfect for a day where I want a light dinner or lunch. making more today so I can freeze them for nights I cook stuff for the family that I don't want :)
